To enhance the fruity and sweet notes of certain beans, we dry the whole cherries under controlled conditions, ensuring uniform drying and protecting the beans from contamination. For clarity and vibrant acidity, we utilize the washed method, where beans are expertly pulped and fermented under careful supervision. This results in clean, bright flavors that reflect the bean’s origin.
We utilize elevated drying beds to allow for proper air circulation, ensuring even drying and preventing mold or over-fermentation. The beans are turned regularly to maintain consistency. During periods of high humidity, we use controlled mechanical drying to guarantee moisture levels are reduced to the ideal 10-12%, ensuring long-term preservation and shipping stability.
Using advanced equipment, we remove the dried parchment layer without damaging the beans, preserving their structure and integrity. For those clients seeking the highest visual standards, we offer polishing services to remove any remaining silver skin, providing a cleaner, more consistent bean appearance. Beans are meticulously sorted by size, weight, and density. Our rigorous defect removal process ensures only the finest beans are selected, guaranteeing uniformity in every lot.
